Grilled Cauliflower Steaks, Gluten Free With Mashed Turnip

Kitchen equipment needed:
1 ea. chef knife, 1 ea. paring knife, 1 ea. meat clever
1 ea. set of measuring spoons & measuring cups
1 ea. pair oven mitts
1 ea. wire whisk, 1 ea. metal spoon, Potato masher
1 ea. cutting board
1 ea. large sauce pan
2 ea. large mixing bowl
1 ea. metal tongs, 1 ea. baking sheet pan
1 ea. cast Iron skillet or cast iron grill pan

Ingredients:
1 .5 –pound or 1 each head of cauliflower
1.5 pounds peeled, diced turnip
1 1/2 cups vegetable broth
1 cup whole milk
¼ tsp of ground nutmeg
½ tsp kosher salt
¼ tsp fresh ground black pepper
¼ tsp allspice
2 tablespoons vegetable oil plus additional for brushing

Directions
Step (1) Preheat Grill to 275°F. Using sharp heavy knife and starting at top center of cauliflower head trim outside leaves, cut two 1-inch-thicks, 4 each slices of cauliflower, cutting through stem end. Set cauliflower steaks aside.

Step (2) Measure approximately 4 cups. Diced peeled turnip and, 1 1/2 cups vegetable broth, and milk in Large saucepan, and sprinkle with salt and pepper. Bring to boil and cook until turnips are very tender, about 15-20 minutes. Strain, reserving 1 cup cooking liquid. Transfer turnip to large bowl. Add reserved 1 cup cooking liquid and mash until smooth. Return puree to same saucepan then season with nutmeg, and allspice then mix thoroughly set aside warm

Step (3) Heat 2 tablespoons vegetable oil in heavy large ovenproof skillet over medium-high heat or spray cast Iron grill pan with food release and heat. Brush cauliflower steaks with additional oil and sprinkle with salt and pepper. Add cauliflower steaks to skillet and cook until golden brown, about 4 minutes per side. Transfer skillet to oven or if using a grill pan transfer steaks to foil lined sheet pan and bake cauliflower steaks until tender, about 12 minutes. Step

(4) Plate assembly; rewarm mashed turnip, over medium heat. Divide turnip between 4 plates; top each with cauliflower steak.
